When my Dr. first told me that I needed to eliminate Gluten dairy and soy from my diet I was a bit overwhelmed. To be perfectly honest the first thing i did was go to Starbucks and buy a pecan coffee cake because I knew it would be my last. but the second thing i did was go to boarders to find literature on my new drastically different lifestyle. as I was checking out the cashier asked me about the gluten free books I was purchasing and I feel he could sense the despair I had from the look in my face. he encouraged me and said "this is probably the best thing that will ever happen to you." I can honestly say say that Mr. Boarders cashier you were right (and I told him so a few months latter)
Although it is a challenge, making specialty dishes and trying to explain my dietary needs to a waiter ,it also has been the most eye opening and educational experience in my life. I have started this blog to document my journey as I am still trying to figure out how to incorporate things I used to love eating into my new diet and hopefully it will help someone else out there as they experience the same emotions and trials.
